It was time to experiment. The avocado was the inspiration on this one. I still had a bit of the thin sliced beef and onion left over so I was thinking about a quick pasta dish but my usual mixes don’t jive with the avocado. So, I did a quick look thru the spice cabinet turned up a packet of fajita seasoning. As soon as my pasta was drained and ready, I tossed in the beef and onions plus some additional diced bell pepper and heated the whole thing up just a bit. I pulled it off the heat while I stirred the seasonings into a couple of table spoons of mayo. I folded it all together until every thing was good and coated. Tossed on sliced avocado and truly enjoyed.
