Turnip Greens and Fried Catfish

Tonight, it got real. I was a little late getting home, so the hunt for dinner inspiration was on. That bag of turnip greens set the stage.

One bag of fresh turnip greens
One yellow onion (diced)
One clove of garlic (minced)
about a cup of chopped bacon
Two small pork loins cut down to bite siced pieces

All of that went into the pan with 1/3 cup of water on medium heat and cooked down until the onions were nice and clear. By then, everything else was thoroughly cooked.

To this, there had to be added a batch of hush puppies.

2 cups cornmeal
1/2 cup all purpose flour
1/2 cup sugar
1/2 cup milk
One egg

Mix it all together in a bowl until smooth but stiff. Add a dash of water if needed to make sure all the mix is properly moistened. I personally use a tablespoon to shape a hush puppy and a teaspoon to push it from the tablespoon into the hot oil. They cook pretty fast so pay attention to what you are doing. I like mine a bit on the darker side.

And a happy discovery brought it all home. I had about a half pound for catfish fillets still in the freezer. I cut those in half just to stay in line with bite-sized approach to dinner so far. They got a quick egg wash and then breaded in all purpose flour with a little salt, pepper, and paprika in the mix. Once deep fried to a crisp golden brown, they got a light dusting with blackening seasoning.

Yes, It really was that good.
