What to do with left over chicken? This morning I was looking at about half of a roast chicken left over from a cooking demo. I got a couple of bowls and sat down to break it all down. Bowl one was for skin, bones, and any other dried or hard bits. Bowl two is for hand pulled chicken. Yes, I got to play with my food while I watched a bit of television. Once I had it all pulled, the bones and other scraps headed to a pot to be boiled for chicken stock.
The chicken shreds looked so tasty, I decided it was time for a time honored classic, chicken salad.
2 cups of shredded chicken
1 cup of mayo
1 tablespoon pickle relish
1 teaspoon mustard (your choice of type)
2 hardboiled eggs crosscut
Basically, toss it all in a bowl and fold over until everything is good and coated. Spoon onto what ever you want to carry it to your mouth. For lunch today, it was some wonderful bagels.
That is about as simple as I can make chicken salad. Now, if you have never made this before, give it a try. By the time you finish the first bite, you will be thinking of what else would be tasty in this.
Thin sliced celery
green onion/leeks
fresh tomato
bok choi/greens
pepper slices/dices of nearly any type
Almost any spice mix available
These are just a few ideas I have seen (and eaten). Variety is only limited by your palette and imagination.
