I was at the grocery store and there was a clearance on shaved pork. A lady saw me pick up a package and remarked that she just had no idea what to do with it. I gave her a couple of quick ideas, she made her selection, and moved on. Later, at work, a number of people were asking me what I was going to cook for the radio show in the morning. When I said shaved pork, I got a lot of blank looks.
So, lets do an easy to make busy person style shaved pork dish. This is going to be a a very simple core recipe. That means, feel free to add and enjoy what ever you want to this recipe. This particular set up works well with a starch like rice, noodles, or mashed potatoes. This will also work on a hoagie bun for the busy person trying to eat and go.
1 Onion diced
1 Lg Potato cubed (small)
.5 Lb Shaved Pork
.5 tsp Lemon Pepper
1 tsp Parsley Flakes
.25 tsp Black Pepper
1 tsp French Tarragon
I start with the onion and begin to sauté with a dash of oil in a pan large enough to hold all the ingredients. I give the onion about a minute head start, then I add the potato. The onion will cook clear and the potato will just start to brown when I add all the shaved pork. Next, I sprinkle all the spices over everything. I stir and fold until the pork is completely done. Serve however you want, on a plate or as a sandwich filler.
