It is the time of year when we get to cook all kinds of stuff we never seen to get around to during the rest of the year. Sweet potato casserole is one my favorite dishes to serve. It is just a fun food.
(5) moderate sized sweet potatoes
1/2 cup of brown sugar
1/4 cup of butter
3 tbsp. of orange juice
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
Optional: a bag of marshmallows
To start this party, you will need to get a good vegetable peeler/scraper and peel the sweet potatoes. Cut them all down into roughly one inch cubes and boil until you can poke and remove a toothpick easily. Drain and mash. How fine to mash is entirely up to your personal taste. Some people like it a bit lumpy and others prefer it to be pie smooth. Fold in thoroughly the rest of the ingredients and the spices. Make sure to get the flavors spread out evenly.
Put your mix into your baking pan. I find a 9 x 12 works just fine for this. Now, here is where I like to cheat and sprinkle more brown sugar lightly over top. Now, I know marshmallows are technically an option, but let’s be honest, you got to have marshmallows. Bake at a low heat about 300 f until the marshmallows are brown. It can be a side dish or dessert. It doesn’t matter just enjoy!
