Since it is Summer, I was looking for a light and cool dessert. A friend had been complaining that all the desserts she had tasted lately were all of the baked variety that were too sweet with frostings or glazes and the breaking was too dry. Since I have been cooking with eggs quite a bit lately, a custard seemed just right. Most people think they are complicated, however, they are actually an easy dish to prepare. Just don’t forget that you have to allow for baking and cooling time.
Here is a basic “starter” custard to prove you can cook one.
2.5 cups of milk
1 tablespoon of vanilla
3 eggs
That really is the whole list. Once you have make your first one, feel free to add a topping. This can range from cinnamon to nutmeg or even ground cloves. Just remember that a little will go a long way.
All I do is put the milk and vanilla in a bowl and break in the eggs. Beat until fully blended. Then, pour into a baking dish. The larger the dish, the thinner the custard will be. Bake at 350 f for about an hour, until a toothpick pulls out clean from the center of the dish. Let it cool and serve.
